You Need To Add This 3 Ingredient Pancake To Your Repertoire

I've been searching for simple recipes lately. Like real simple. Partly because I recognise that people are time poor and this is what they want to read, but mainly because I'm lazy. As they say in the tech world; "Minimum Viable Product."

This three ingredient pancake certainly fits the mould. You'll notice that it's pretty 'eggy' which is a positive and a negative. They won't be fluffy like the best pancakes you've ever eaten. But that means that you're getting a lot more satiating protein and you'll feel a lot better afterwards. You won't have that stomach discomfort that I find comes with flour and sugar. Plus the banana and cinnamon really bring some flavour and additional nutritional properties.

If you find they're a bit too flat for you you can always add half a cup of gluten free flour, like quinoa flour or coconut flour. Just remember to add a raising agent, like 1/2 teaspoon of baking soda, so the flour and egg 'lift' your pancakes to fluffiness. 

3 Ingredient Pancake Recipe

  • Makes 8 medium pancakes

Ingredients

  • Ripe bananas - 2
  • Organic eggs - 4
  • Cinnamon - 1 teaspoon

Method

  1. Either mash and whisk the ingredients together or throw them in a blender for 10 seconds
  2. Add 1 tablespoon of coconut oil to a medium hot pan and add mixture to desired size
  3. Flip and serve with your favourite toppings

I love me some Canadian maple and a bunch of antioxidant rich berries as the sweet and sour play together beautifully. The best part about this recipe is that it's just potassium and protein which means you feel fantastic with no pancake postmortem.
