You Need To Make These Superfood Cookies

What a wonderful world we live in. You can now make peanut butter and choc chip cookies that are healthy. Seriously healthy.

Let's examine the nutritional properties of all seven ingredients.

  1. Quinoa flakes - protein and fibre dense
  2. Peanut butter - rich in protein and brain stimulating good fats
  3. Cinnamon - one of the best antioxidants on the planet
  4. Banana - fibre and potassium rich
  5. Cacao - one of the best sources of magnesium and it's also full of antioxidants
  6. Maple syrup - dense in nutrients and minerals, but use sparingly
  7. Baking powder - meant to be good for heartburn but we just need it to raise our cookies

Ok, so we lose a little momentum near the end of that list but I hope I still made a point. These homemade cookies are incomparable to anything you buy in a store. The only similarity to the sugar loaded, long life supermarket cookies are that these are similarly delicious and addictive.

Peanut Butter & Cacao Chip Cookie Recipe


  • Quinoa flakes - 2/3 cup (or use oats)
  • Cinnamon - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • Banana, ripe - 1
  • Peanut butter - 1 cup
  • Maple syrup - 1/3 cup
  • Cacao nibs - 1/2 cup

Makes 15 - so obviously double or triple the recipe


  1. In a medium bowl, toss the quinoa flakes, cinnamon and baking soda together
  2. Set aside
  3. In a medium bowl mash the banana
  4. Mix in the peanut butter and maple syrup with a large rubber spatula until combined
  5. Pour in the dry ingredients and slowly mix until everything is combined
  6. Fold in the cacao nibs
  7. Chill the cookie dough for 30 minutes in the fridge
  8. Preheat oven to 176 degrees
  9. Line two large baking trays with baking paper
  10. Scoop the dough, about 50 grams, onto prepared baking sheet and slightly press down - optional - to get an even bake is to scoop the mixture into a cookie cutter press down and then remove the cookie cutter
  11. Bake two batches
  12. Bake for 11 minutes
  13. Allow the cookies to cool for 10 minutes on the baking sheet before transferring to a wire rack to cool completely
  14. Cookies stay fresh stored covered at room temperature for up to 7 days - Cookies freeze well, up to 3 months
