How To Make Baby Pies Out Of Sweet Potato

How cute are these little guys? They're fluffy and dang delicious too.

Plus they're easier to make than they look. Which means you don't have to give up your whole day to blow your friends away.

Bite Size Sweet Potato Pies

Ingredients

Crust

  • Cashews - 1 cup
  • Almonds - 1 cup
  • Pitted dates - 12
  • Maple syrup - 1/8 cup
  • Coconut oil - 2 tablespoons, melted
  • Cinnamon - 1/4 teaspoon
  • Sea salt - 1/4 teaspoon

Filling

  • Sweet potatoes - 2 large
  • Coconut milk - 3/4 cup
  • Arrowroot powder - 2 tablespoons
  • Hot water  - 3 tablespoons
  • Maple syrup - 1/3 cup
  • Cinnamon - 1 tablespoon
  • Ground ginger - 2 teaspoons
  • Sea salt - 1/4 teaspoon
  • Ground nutmeg - 1/4 teaspoon
  • Ground cloves - pinch

Sugar Free Paleo Sweet Potato Pie Recipe

Method

  1. Preheat the oven to 190 degrees.
  2. Oil two mini cup cake pans (or use a normal cupcake tray)
  3. Skin and cut the sweet potatoes into large pieces for cooking
  4. Add them to a large pot of water and bring to a boil to cook for about 20 minutes, or until very soft
  5. As the potatoes cook, make the nut crust for the pies
  6. Pulse all the nuts in a food processor until they are finely chopped
  7. Add the dates one at a time through the shoot and pulse until the nuts just begin to hold together
  8. By hand, stir in the maple syrup, coconut oil, cinnamon and salt
  9. Press about 1 tablespoon of the crust mixture into each cupcake mold, pressing it up along the sides until you have an even crust
  10. Bake for 5 minutes in the oven, and then allow to cool a little, while you prepare the filling
  11. For the filling, drain and mash the sweet potatoes, mixing them with the coconut milk and remaining spices (see note)
  12. Dissolve the arrowroot powder in the hot water by stirring until it dissolves
  13. Over medium heat, add the potato mixture back into the emptied pot along with the dissolved arrowroot powder and maple syrup
  14. Cook until the sugar is melted and everything is combined
  15. Transfer back to the food processor, or a blender to smooth the mixture
  16. Fill each cup of nut crust with sweet potato - I like to pile mine high
  17. Return to the oven to bake for another 20 minutes as the filling will remain soft

Before you reheat the mixture taste and adjust the spices to your liking.
