How To Make The Kingston Biccy Clean

I loved Kingstons because of the sweet coconut and oat cookie paired with the rich chocolate filling. I would twist it open eat the centre first. However, you know the storey. Those sugar and preservative filled delights would make me crook soon after.

Not wanting to give up the flavour, I've made a Green Press remix. Maple syrup and coconut sugar replace the golden syrup. And quinoa flakes and cashews make them gluten free. An avocado chocolate mousse more than does the job in the middle.

Klean Kingston Biscuit Recipe

Biscuit Ingredients

  • Coconut oil (melted) - 2 1/2 tablespoons
  • Coconut sugar - 1/4 cup
  • Maple syrup - 1/2 cup
  • Vanilla - 1 teaspoon
  • Water - 1 tablespoon

Chocolate Filling Ingredients

  • Avocado - 1
  • Cacao powder - 3 tablespoons
  • Maple syrup - 3 tablespoons
  • Vanilla - 1 teaspoon
  • Sea salt - pinch

Biscuit Method 

  1. Pre-heat oven to 150 degrees and line two baking trays 
  2. Process the dry ingredients together
  3. Add in the wet ingredients and process until combined
  4. Roll out between two pieces of baking paper and cut out circles until you have an even number - I made twenty but you can make them bigger or smaller
  5. Transfer circles on to trays and bake for 20-30 minutes or until golden
  6. Remove from oven and allow to cool completely.

Chocolate Filling Method

  1. Cut the avocado in half remove the pit and scope out the flesh into a food processor
  2. Add the rest of the ingredients and process until combined
  3. Taste and adjust the level of chocolate and maple syrup to your liking
  4. Cover and leave in fridge until needed 

Now for the assembling. Sandwich two biscuits halves together with about 1 tablespoon of chocolate filling.

Store in the fridge for up to one week or freezer for about one month.
