How To Make The Aussie Icon Perfectly - Clean & Raw Lamingtons

Lamingtons. A traditional Australian baked good is and forever will be a regular occurrence at school fetes and local bakeries. We've naturally turned it into a healthier option. It's for everyone following a raw, vegan, gluten free, refine sugar free diet or those adventurous enough to try it. The vanilla sponge is made up of cashews and coconut, the jam is made up of the raw version of our chia jam recipe, and the chocolate is course good for you. It even looks like a Lamington! 

Raw Lamington Recipe

Ingredients

Vanilla Cake

  • Cashews - 2 cups
  • Desiccated coconut - 2 cups
  • Maple syrup - 1/2 cup
  • Water - 1 1/4 cups
  • Vanilla - 1 tablespoon
  • Coconut oil, melted - 3/4 cup

Berry Jam

Raw Chocolate

  • Raw cacao powder - 1/2 cup
  • Coconut oil - 1/2 cup
  • Maple syrup - 1/2 cu

Garnish with desiccated coconut.

Method

  1. Blend the vanilla cake ingredients together until relatively smooth 
  2. Divide one half into a Chinese take away container and the other half into a bowl
  3. Set the Chinese takeaway in the freezer for about 1 hour or until the top has set - cover the bowl and put it in a cool dry place
  4. Remove the vanilla layer from the freezer
  5. Spread a layer of jam on top - go as thick or think as you like
  6. Set in the freezer for 1 hour or until the jam has set
  7. Give the vanilla half in the bowl a stir and pour over the jam, flatting the top with a palate knife or back of a spoon
  8. Freeze for 2 hours or until set
  9. When set make the chocolate by whisking all ingredients together in a bowl over another bowl of warm water
  10. Pour the shredded coconut into a bowl and line a tray with baking paper
  11. Cut the vanilla and jam cake into 8 squares
  12. Using two forks coat a square in the chocolate than the coconut and set on tray
  13. Repeat for all
  14. Enjoy
  15. Store in the fridge or freezer
