You Need To Make These Sugar Free Monte Carlos

The Monte Carlo. Another iconic Aussie biscuit. As much as these "bickies" taste like patriotism, they're not made of ingredients you'd recognise as food. So I've remixed these puppies with real foods. And no sugar.

Homemade Monte Carlo Recipe

Biscuit Ingredients

  • Egg - 1
  • Melted coconut oil - 1/4 cup 
  • Raw honey - 1 cup 
  • Vanilla - 1 teaspoon 
  • Ground almonds -3/4 cup 
  • Coconut flour - 3/4 cup 
  • Desiccated coconut - 1/2 cup 
  • Baking soda - 1/4 teaspoon 

Cashew Coconut Butter

  • Roasted cashews - 2 cups
  • Desiccated or shredded coconut - 3.5 cups 
  • Coconut flour - 1/2 cup 
  • Raw honey - 1/4 cup 
  • Vanilla - 1 teaspoon 
  • Sea salt - pinch

Jam

Our Chia Jam can be cooked or served raw

Biscuit Method

  1. Preheat oven to 180 degrees (350F)
  2. Line a baking tray
  3. Whisk wet ingredients together
  4. Mix dry ingredients together
  5. Combine the two
  6. Roll out between sheets of baking paper and use a round cookie cutter or glass to cut out an even number of circles
  7. Bake for 10 minutes
  8. Allow to cool

Cashew Coconut Butter

  1. Process everything together until combined and as smooth as you can get it 

    coconut oil

    Assemble 

    1. Add roughly 1.5 tablespoons of Cashew Nut Butter to a biscuit spreading it all the way to the edge
    2. Top with 1 tablespoon of Chia jam
    3. Add a second biscuit on top
    4. Enjoy
    5. Keep refrigerated
    6. Store left over cashew coconut butter and chia jam in refrigerator
