Healthy Vegan Dessert Recipes - Picnic Bar

Ingredients 

Wafer Layer

  • Thin brown rice cakes - 4

Caramel Layer

  • Pitted dates - 1/2 cups
  • Coconut oil, melted - 1/4 cup
  • Tahini - 1 tablespoon
  • Maple syrup - 1/4 cup
  • Cashews - 1/2 cup (soaked 2-4 hours then rinsed)
  • Water - 1/4 cup
  • Peanuts - 1/2 cup

Chocolate Layer

  • Coconut oil, melted - 1/2 cup
  • Maple syrup - 1/4 cup
  • Cacao powder - 1/2 cup

Homemade Raw Picnic Bar - Raw Vegan Dessert

Method

  1. Roughly cut rice cakes into 24 small rectangular shapes and set aside
  2. For the caramel, blend all ingredients until relatively smooth
  3. Using a butter knife, spread some of the caramel mixture onto one wafer piece and sandwich together with another
  4. Coat rice cake wafers with caramel mixture on the top and sides, leaving the bottom
  5. Cover with halved peanuts and set aside
  6. For the chocolate, melt the coconut oil before combining it with the raw cacao and maple syrup
  7. Dip each bar into chocolate mixture and place on a tray lined with baking paper
  8. Pop in the freezer until solid and enjoy

Healthy Mars Bar Recipe

Ingredients

Nougat Base

  • Almonds - 1/3 cup (soaked in water 8 hours)
  • Cashews - 1/3 cup (soaked in water 4 hours)
  • Maple syrup - 2 tablespoons
  • Lucuma powder - 1 tablespoon
  • Coconut water - 1-2 tablespoons

Caramel

  • Pitted dates  - 1 cup (soak for 4 hours or quickly soak in boiling water)
  • Almond butter - 2 tablespoons
  • Coconut water - 2 tablespoons
  • Vanilla paste (or essence) - 1 teaspoon
  • Maple syrup - 2 tablespoons
  • Sea salt - pinch

Chocolate

  • Coconut oil, melted - 1/2 cup
  • Cacao powder - 1/2 cup
  • maple syrup - 1/4 cup
  • Vanilla paste - 1 teaspoon
  • Sea salt - pinch

Method

Nougat

  1. Drain almonds and cashews
  2. Place in food processor with other nougat ingredients pulse until just coming together but still lumpy
  3. Spread into a small tin line with baking paper and freeze

Caramel

  1. Blend all ingredients until creamy
  2. Pass through a sieve over the nougat to get a smooth caramel and freeze for three hours
  3. Remove from freezer cut into rectangles and return back to freezer while you make the chocolate

Chocolate

  1. Whisk together in a bowl over a bowl of hot water
  2. Use a fork to dip the bars into chocolate
  3. Dip each bar twice
  4. Place back on tray and freeze for 15 minutes to set
  5. Enjoy
  6. Store the survivors in the freezer

A Mars a day helps you work, rest and play. Or at least this one might. The original one helps you develop pimples.

Now let's move onto the Bounty. My personal favourite. The delicious simplicity of coconut and chocolate. We've added antioxidant rich acai to crank up the nutrition. But if you'd rather the traditional white look then leave them out. 

Superfood Bounty Bar Recipe

Ingredients

Coconut Acai Filling

  • Honey or maple - 3 tablespoons
  • Vanilla - 1 teaspoon
  • Water - 2-3 tablespoons
  • Mixed frozen berries - 1/4 cup
  • Coconut oil (melted) - 1/4 cup
  • Desiccated or shredded coconut - 2 cups
  • Optional - Acai powder - 4 heaped tablespoons

Chocolate

  • Raw cacao - 1/2 cup
  • Coconut oil (melted) - 1/2 cup
  • Maple syrup - 1/4 cup
  • Vanilla - 1 teaspoon
  • Sea salt - pinch

Method

Coconut Acai Filling

  1. Blend the first six ingredients together and add a little more water if it needs help
  2. Stir in coconut oil and blend again
  3. Add this to a food processor with the coconut
  4. Process until it holds together between fingers
  5. Rip off about 30cm glad/cling wrap
  6. Shape the mixture into a rectangle several centimetres thick
  7. Use a palette knife to round off edges
  8. Fold the glad wrap over and freeze for 30 minutes
  9. Remove from freezer cut into rectangles return back to freezer while you make the chocolate

Chocolate

  1. Make the chocolate by mixing all in a bowl over another bowl of hot water
  2. Remove the bars out of the freezer
  3. Use a fork to dip the bars into the chocolate and place back onto the tray
  4. If your house isn't too warm the chocolate should set straight away, if not, return to the freezer for 15 minutes

Raw Vegan Paleo Dessert Recipe

Enjoy. Store the survivors in the freezer. When you're ready for round two, sit them out the bench for 10 minutes to let them soften slightly.

Now let's get back to chocolate caramel recipes. The Twix Bar. Another classic that tastes delicious with sugar free ingredients.

Guilt Free Twix Bar Recipe

Ingredients

Biscuit Layer

  • Cashews - 1 cup
  • Coconut flour - 1 tablespoons
  • Honey or maple - 2 tablespoons
  • Vanilla  - 1/2 teaspoon
  • Sea salt - pinch

Caramel

  • Dates - 1 cup
  • Tahini - 1 1/2 tablespoons
  • Coconut water - 2 tablespoons
  • Sea salt - 1/8 teaspoon
  • Vanilla - 1/2 teaspoon
  • (Optional) Maple syrup - 2 tablespoons

Chocolate Coating

  • Raw cacao powder  - 1/2 cup
  • Coconut oil - 1/2 cup
  • Maple syrup - 1/4 cup
  • Sea salt - pinch

Method

Biscuit Layer

  1. Line a baking tray with baking sheet
  2. To prepare the biscuit layer process the cashews until fine add your sweetener of choice, coconut flour and salt process until combined
  3. Transfer the batter to the prepared baking tray line
  4. Use your hands to form a rectangular shape about ½ inch thick
  5. Place the pan in the freezer to set while you prepare the caramel filling

Caramel

  1. In a high-speed blender, combine the caramel filling ingredients and blend until well combined - you may need to stop and scrape down the blender a couple of times, to make sure everything is blended evenly
  2. Remove the cookie layer from the freezer
  3. Pass the caramel through a sieve onto the biscuit layer to achieve a smooth caramel
  4. Freezer for 3 hours to firm up
  5. When caramel has set cut into rectangle size Twix shapes and return to freezer while you make the chocolate coating

Raw Vegan Sugar Free Twix Bar Dessert

Chocolate

  1. Mix all chocolate ingredients into a bowl, above another bowl full of hot water
  2. Remove the bars from freezer. Use a fork to help dip into the chocolate and place back onto the tray - repeat the process again
  3. Let sit in freezer for 15 minutes for the chocolate to set

Paleo Friendly Sugar Free Dessert Raw Twix

Now they're ready to enjoy. Take Instagram snaps, scoff your face, share with friends.

Next up is the Mint Pattie. Chocolate meets peppermint. A classic that has stood the time.

Healthy Mint Pattie Recipe 

  • Makes: 6-7

Ingredients

Patties

  • Shredded coconut - 1 cup
  • Cashews - 2/3 cup
  • Coconut oil - 3 tablespoons, melted
  • Maple syrup - 2 tablespoons
  • Peppermint oil - 3-4 drops (or use peppermint essence)
  • Sea salt - pinch

Chocolate

  • 1 cup raw cacao
  • 3/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • Pinch of salt
  • 1/4 teaspoon of cinnamon
  • 1/4 teaspoon of cayenne

Method

  1. Line a tray with baking paper
  2. In a food processor, mix all of the patties ingredients together, except the peppermint oil
  3. Once that's smooth, add the peppermint oil and mix again for a few pulses
  4. Mold into flatten size patties with hands and place on the tray 
  5. You can use a round cookie cutter if you like
  6. Refrigerate for 30 mins or until set
  7. Whisk chocolate ingredients together in a heat proof bowl
  8. Dip each patties into the chocolates and smooth out with a palate knife or back of a spoon- this bit is messy
  9. If your kitchen isn’t too warm the chocolate should set instantly but you can use the fridge to speed things up
  10. Store in the fridge or freezer

how to make peppermint patties with peppermint oil

Notes

The patties may seem oily when your molding them. Don’t worry as they won’t be once set. You’ll have left over chocolate. Pour it into chocolate molds, or spread it out in a container on some making paper and freeze for instant home made chocolate. If the chocolate begins too hard place the bowl over a bowl of boiling water and give it a whisk/stir.
