This smoothie will taste as good as your favourite peppermint chocolate chip ice cream. Whether thats a Drumstick, a Cornetto or something in a tub. All the flavour, none of the nasties. And with some serious nutritional properties.

Consuming two cups of kale for breakfast puts you in rare company. Just that itself equals four times your daily vitamin A needs, twice your vitamin C needs, 13 times your vitamin K needs and 50% your manganese needs. Plus there is fibre, calcium and B vitamins. What does that all mean? You've prevented disease, you've given your body energy, you've slowed ageing and you've brightened your skin. All that whilst enjoying a two minute breakfast that tastes like ice cream.

Mint Choc Chip Smoothie Recipe with no dairy

Mint Choc Chip Smoothie

  • Takes 2 minutes
  • Makes 1 serving

Ingredients

  • Kale - 1 1/2 cups
  • Mint - 1 cup
  • Frozen banana - 1
  • Pumpkin seeds - 1/4 cup
  • Cacao nibs - 1 tablespoon
  • Coconut protein powder - 1/2 scoop
  • Almond Milk - 1 1/2 cups

Method

  1. Blend for 30 seconds
  2. Optionally garnish with mint and more cacao nibs
  3. Upload to Instagram, brighten it in editing, tag @greenpress.co
