Boost Your Collagen With This 5 Minute Coconut Slice

Coconut is an ultimate ingredient. Everyone loves the flavour; it's sweet without being glutinous. Plus coconut's sticky texture means it's perfect for cookies, bars and protein balls. You could probably makes this bar just by blending shredded coconut.

However, let's give it a little flair, with minimal effort. Firstly, let's get some Collagen + Vitamin C in here. Our Forever Young is ideal for bars because it's tasteless, yet it will significantly improve the health of your skin.

Then we make it a little sweeter with maple, vanilla and sea salt. You could easily freestyle on our base and add another flavour too. Some ideas include:

  • Lemon - add the juice of 3 lemons
  • Cacao - add 1/4 cup of cacao or cocoa
  • Choc chip - get 1/2 cup of cacao nibs or dark chocolate chips
  • Coffee - add 4 shots of strong espresso

But I keep it OG. Original vanilla is my favourite. Enjoy one of these bars everyday. You'll boost your skin and satisfy that sweet tooth without doing any damage.

Coconut Collagen Bar

  • Takes 5 minutes prep
  • Takes 60 minutes to set
  • Makes 16 bars


  • Shredded coconut - 4 cups
  • Forever Young - 3 heaped tablespoons
  • Maple syrup - 3/4 cup
  • Coconut oil - 1/2 cup
  • Vanilla paste - 2 teaspoons
  • Sea salt - pinch


  1. Find a baking dish and line it with baking paper
  2. Next, add all these ingredients to a food processor, or powerful blender, and process for 30-60 seconds
  3. Once mixed, scrape into your baking tray and push it down firm
  4. Place the tray in the freezer for 20 minutes, or the fridge for 60, and let it set
  5. Remove from tray and cut into squares
  6. Seriously enjoy
