Forget The $50 Brunch: Make Sweet Potato Waffles In Your Blender

I bought a waffle iron about 12 months ago. I think I used it once and then it took residence in the back of the cupboard. 

It was only when I cleaned out the pantry that I remembered it existed.

Before putting it on eBay with all the other one time kitchen appliances that people buy (ice cream maker / yoghurt maker / juicer etc) I thought I'd give it another run.

I'm glad I did. Because waffles are unbeatable. They're like well designed pancakes.

To get some recipes I just scoured Pinterest and amalgamated a few different versions. After trial and error, I settled on two recipes. One sweet, one sour.

Both recipes are baby friendly. My 1 year old smashes these. I'd just go a little easy on the salt in the savoury option. 

Blender Made Sweet Potato Waffles - Two Versions

1. Sweet

Ingredients

  • Sweet potato - 1 medium
  • Banana - 1
  • Free range eggs - 2 (vegans can use chia or flax eggs)
  • Cinnamon - 2 teaspoons
  • Rolled oats - 2 cups
  • Healthy flour (quinoa / coconut / banana / sweet potato etc) - 1 cup
  • Pitted dates - 5
  • Baking powder - 1 teaspoon
  • Almond milk - 1 cup

Method

  1. Peel and dice your sweet potato into small pieces
  2. You can boil or roast them to soften - I actually use the microwave (it's the fastest) - line a large bowl with two sheets of moist paper towel and add the sweet potato - cook on high for six minutes
  3. Turn on your waffle iron so it warms up
  4. While the sweet potato cooks, add every other ingredient to your blender
  5. When the sweet potato is soft, add it to the blender jug and blend for 30-60 seconds
  6. Lubricate your waffle iron - I use 100% olive oil in a spray can
  7. Pour your batter in the middle and let it spread out; don't over fill as it will expand
  8. Cook until golden and firm
  9. Repeat with all your batter
  10. Serve how you like (blueberries or maple or almond butter etc)
  11. Bon appetit

2. Savoury

 

Ingredients

  • Sweet potato - 1 large
  • Free range eggs - 2 (vegans can use chia or flax eggs)
  • Rolled oats - 1 1/2 cups
  • Healthy flour (quinoa / coconut / banana / sweet potato etc) - 1 cup
  • Baking powder - 1 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Garlic powder - 1 teaspoon
  • Sea salt - heavy pinch
  • Black pepper - heavy pinch
  • Lemon - 1/2
  • Almond milk - 1 cup

Method

  1. Peel and dice your sweet potato into small pieces
  2. You can boil or roast to soften - I use the microwave (it's the fastest) - line a large bowl with two sheets of moist paper towel and add the sweet potato - cook on high for six to eight minutes
  3. Turn on your waffle iron so it warms up
  4. Juice the 1/2 lemon and zest the surface, adding both into a blender jug
  5. Add every other ingredient, as well as the sweet potato when it's cooked
  6. Blend for 30-60 seconds
  7. Lubricate your waffle iron - I use 100% olive oil in a spray can
  8. Pour your batter in the middle and let it spread out; don't over fill as it will expand
  9. Cook until golden and firm
  10. Repeat with all your batter
  11. Serve how you like (avocado / egg / hot sauce / cherry tomatoes etc)
