If you're from Australia, or even just visited, you know and love Golden Gaytime ice creams. If you're not familiar, then yes, really, there is a popular ice cream in Australia called a Gaytime.
Equally as popular as a Gaytime is peanut butter. So we put together a bliss ball recipe that is life changing. The sweet crunch of a Gaytime and the decadent richness of peanut butter. Sugar, dairy and gluten free of course. If you have peanut allergies, this recipe might be a good way to go out.
Golden Gaytime Peanut Butter Ball Recipe
- Takes 15 minutes
- Makes 15 balls
Ingredients
- Cashews - 250g
- Peanut butter - 150g
- Pitted dates - 80g
- Water - 50ml
- Coconut or vanilla protein powder - 1 scoop
- Cinnamon - 1/2 teaspoon
- Sea salt - 1/2 teaspoon
- Extra virgin olive oil - 30ml
- Optional - Chopped peanuts - 50g
Method
- Create date paste by boiling the dates in 50mls of hot water on the stove for five minutes, or zapping in the microwave for four minutes
- In a food processor, blitz the cashews until they become really crumbled
- Add the remaining ingredients and continue blitzing until creamy
- If it's too dry, add 30ml of water
- The batter should be slightly moist and moldable
- Use your hands to turn them into golf size balls
- Ideally, although optionally, roll them in chopped peanuts
- They're fresh in the fridge for up to four weeks but I like to store in the freezer, otherwise I eat 10 of them in one day #fatboyslim
