I love a good blueberry muffin. Fluffy and sweet, they tie you over in between meals. However, I haven't ordered one in years. I feel sick afterwards. They're full of sugar and if they're made fresh, how come I often see them in cafe windows overnight?
Unless you bake them at home with healthy flour and sugar alternatives, they can't be trusted. But you can still have those flavours every day if you like. Just make a blueberry and oat smoothie instead. This one is the bomb because we add a bunch of kale that you can't taste.
This recipe uses a little Greek yoghurt. Protein and probiotics. But you can leave it out if you want to go vegan.
Blueberry Muffin Smoothie
- Takes 4 minutes
- Makes 1 serving
- Kale - 2 cups
- Frozen blueberries - 1 cup
- Oats - 1/2 cup
- Greek yoghurt - 2 tablespoons
- Raw honey - 1 teaspoon
- Almond milk - 1 1/2 cups
- Blend until creamy
